BLACKBERRY TRIFLES

Blackberry trifles

12 cantuccini biscotti
20g (3/4oz) butter, chilled and chopped
2tbsp soft brown sugar
1 tbsp Grand Marnier, brandy or sherry
400g (13oz) blackberries
600ml (20fl oz) ready-made vanilla custard
2tsp Grand Marnier
100ml (3fl oz) mascarpone
1. Place the biscotti, butter and sugar in a food processor and process to form a coarse crumble-like mixture. Spoon the mixture into the bottoms of 6 serving glasses or dishes and drizzle a little Grand Marnier over the biscuits.
2. In each glass, place a layer of blackberries on top of the biscuit mix, then top to just over half-full with a layer of custard. Repeat with another layer of blackberries (reserving 12 for decoration), then fill each glass almost to the top with custard. Chill until ready to serve.
3. To serve, whisk 2 teaspoons of Grand Marnier into the mascarpone and place a dollop on top of each glass. Top with the remaining blackberries.

TIP

These can be made up to 6 hours ahead of serving. Just don't add the mascarpone until you're about to serve them
